Lobster press

This is the Lobster Press. It lives in the Sea Grill restaurant, in the Radisson hotel in Brussels. It is one of only three in the world. It weighs 40 kilos, including 27 kilos of silver. The press is rolled on a trolley to the customer’s table, where meat from the body of the lobster is placed in the press, and the juice squeezed from it is drizzled over the tail meat.
Does this make it taste better than if they just squeezed the meat and extracted the juice using some more mundane piece of kitchen equipment and then presented you with the completed dish? Probably not, but restaurants like this often like to add a touch of theatre to the dining experience. And why not?
Personally, I went for the sea bass.
